It’s that time of the year again where we Filipinos savor the best season ever….Christmas!  We never forget to enjoy this holiday despite all the difficulties and obstacles we had to face the rest of the year.  I guess its because at the end of the day, no matter what happened, we still like to end it with joy in our hearts and laughter in our souls…

And we never miss out on serving the best food for our families during the holidays…well, even if its not a holiday, we still manage to come up with good food.  Admit it, we love eating 🙂

Bibingka is considered as one of the must have desserts on our Christmas tables.  Its made of galapong and fresh eggs cooked with charcoal.  Topped with salted eggs and white cheese, lathered with melted butter and drizzled with sugar.  It is often paired with grated coconut.  Another Filipino favorite is the puto bumbong made out of glutenous rice, steamed, lathered with melted butter, topped with Muscovado sugar, served with freshly grated coconut.

Bibingka nowadays are made available all throughout the year by bibingka franchises scattered in the Metro.  One of the most popular one is Ferino’s Bibingka.  Started in 1938 by the husband and wife team of Ceferino and Tinay Francisco (www.facebook.com/pages/Ferinos-Bibingka/66942811872).  They have branches in Makati Ave near Jollibee, Harrison Plaza fronting the entrace to SM department store, Rustan’s Express in Katipunan, Market Market in Taguig, Gilmore Ave near St. Paul’s, Greenhills beside the chapel and in SM Mall of Asia.

I think I’ll have mine with extra butter please 🙂
